Stuffed potatoes with Casatella sauce, pistachio nuts and walnuts

Lavate con cura le patate e cucinatele a vapore con tutta la buccia (potete anche impiegare il forno a microonde). Una volta cotte, ancora tiepide, tagliatele a metà, scavatele nel centroe schiacciate la parte di patata prelevata in un contenitore capace.

Wash the potatoes thoroughly and steam cook with the skin (alternatively cook in a microwave). Once cooked and still warm, cut in half, scoop out the flesh and put it into a container. Wash the leek, chop finely and stir fry with oil and garlic; mash the pistachio nuts and the walnuts and add to the leek. Mix together with the potato flesh and add the Casatella. Add some chives for flavour. Pour the compost into the potatoes. Place each potato onto a plate and decorate with some parsley. Sprinkle with some ground nutmeg.
