Pasta bundles with leek and potatoes on a bed of Crema del Piave, pears and bacon

Scottare in acqua bollente la sfoglia di pasta. Scolare e passarla su ambedue i lati nel parmigiano grattugiato. Saltare i porri in padella; aggiungere le patate lesse schiacciate e mescolare bene.

Scald the pastry in boiling water. Drain and sprinkle the Parmesan cheese on both sides. Stir fry the leek, add the boiled potatoes, squash and mix well. Divide the mix into 4 parts and place one part into the centre of each of the sheets of lasagna pasta and close up to form a bundle. Cook in the oven at 200 °C for 7 minutes. Cook the bacon in the oven separately until crisp. Heat the Crema del Piave in bain-marie and lay it onto a plate. Position the bundle at the centre and garnish with stir fried diced pieces of pear and the bacon.
