Lavate le zucchine, asciugatele e tagliatele a rondelle sottili. Ricavate dallo Stracchino di bufala dei dischi delle stesse dimensioni. Componete tante colonnine, alternando le fettine di zucchina a quelle di stracchino. I

Wash the courgettes, dry them and cut into thin slices. Cut the buffalo stracchino into slices of the same size. Build up several towers, alternating between slices of courgettes and slices of stracchino. Place the towers on a serving dish over a bed of pesto genovese and garnish with a few basil leaves and cherry tomatoes. Drizzle over some extra virgin olive oil. For a sweet variation, use slices of Williams pears instead of courgettes and garnish with sultanas.
