Pumpkin Velvet Soup with Genuino and Speck Cubes

½ pumpkin
1 white onion
250 g of water
100 g of milk
2 thick slices of speck
Genuino Tomasoni
40 g of extra virgin oil

Tagliate la zucca a pezzetti privandola della buccia esterna, mettetela in una casseruola con la cipolla tagliata a pezzetti, l’olio, l’acqua , il latte, il sale e il pepe e fate cuocere per 20 minuti.

Slice the pumpkin removing the skin, put it in a pan with thinly sliced onion, olive oil, water, milk, salt, and pepper and cook for 20 minutes. When the pumpkin is soft, blend it with an immersion blender to obtain a creamy soup. In the meanwhile cut the Speck into small cubes and roast it in a pan for a couple of minutes. Serve the pumpkin soup with a spoonful of Genuino and Speck cubes.
