Pelate le rape rosse cotte al vapore ( in commercio si trovano già cotte, potete trovarle nel banco frigo delle insalate, nei supermercati) e tagliatele molto sottilmente. Se avete a disposizione un'affettatrice, sarebbe meglio perché dovete tagliare delle fette quasi trasparenti.

Peel the beetroots if necessary and slice very thinly. If you have it, you may use a food cutter to obtain almost transparent slices. Fill half the slices with a teaspoonful of goat Stracchino, then overlap them with other slices, press the edges and cut the Ravioli with a round cookie cutter. Lay the Ravioli in the dishes and season with abundant olive oil, salt, and pepper.
